Ingredients
Green Pistachio-Dill Cheese
  • 1/2cup almonds
  • 1/2cup pistachios
  • 3tbsp nutritional yeast
  • 1/2cup Water
  • 1cup soy milk
  • 3tbsp tapioca flour
  • 1 1/2tbsp agar agar
  • 2cloves garlic
  • 1tsp lemon juice
  • salt
  • onion powder
  • Toppings: Toasted pistacios, dill, spices
  • oil
Red Cashew-Paprika Cheese
  • 1cup cashew
  • 1/2cup Water
  • 1cup soy milk
  • 3tbsp nutmeg
  • 3tbsp tapioca flour
  • 1 1/2tbsp agar agar
  • 2cloves garlic
  • 3pieces sundried tomatos
  • 1tsp lemon juice
  • 1tsp apple cider vinegar
  • 4leaves basil
  • Spices(salt, sweet paprika, onion powder)
  • Toppings: Red paprika powder, smokey paprika, dried basil, bbq powder

Instructions
Green cheese
  1. For that amount you will get 4 cheeses (11cm form) – 2 green and 2 red.
  2. First of all, soak all the nuts – pistacio, almonds and cashew – for about 4-5 hours.
  3. Then, start with green cheese. Add to the blender all the ingredients and blend until smooth.
  4. Pour the mixture into a small pan and shimmer for 5 minutes.
  5. Grease the cheese mold with the oil and pour the mixture in it. Let it cool at the room temperature.
Red cheese
  1. In the meantime prepare red cheese in the same way. Add all the ingredients into a blender and blend until smooth.
  2. Pour the mixture into a small pan and shimmer for 5 minutes.
  3. Grease the cheese mold with the oil and pour the mixture in it. Let it cool at the room temperature.
  4. When it’s cool enough, put all the cheeses it into the fridge for about 20-30 minutes.
  5. After that, carefully take out the cheese and dip/sprinkle with prepared mixture.
  6. Green – shreded pistacios and chopped dill, also you can add other favourite herbs.
  7. Red – mix sweet paprika powder with smoked paprika and barbeque powder, add dried basil.
