Vegan Cheese Platter a.k.a. Party Platter! Enjoy these just with crackers, or add some fresh veggies, hummus, olives and it turns into a perfect appetizer for any party!

Ingredients
Green Pistachio-Dill Cheese
- 1/2 cup almonds
- 1/2 cup pistachios
- 3 tbsp nutritional yeast
- 1/2 cup Water
- 1 cup soy milk
- 3 tbsp tapioca flour
- 1 1/2 tbsp agar agar
- 2 cloves garlic
- 1 tsp lemon juice
- salt
- onion powder
- Toppings: Toasted pistacios, dill, spices
- oil
Red Cashew-Paprika Cheese
- 1 cup cashew
- 1/2 cup Water
- 1 cup soy milk
- 3 tbsp nutmeg
- 3 tbsp tapioca flour
- 1 1/2 tbsp agar agar
- 2 cloves garlic
- 3 pieces sundried tomatos
- 1 tsp lemon juice
- 1 tsp apple cider vinegar
- 4 leaves basil
- Spices (salt, sweet paprika, onion powder)
- Toppings: Red paprika powder, smokey paprika, dried basil, bbq powder

Instructions
Green cheese
- For that amount you will get 4 cheeses (11cm form) - 2 green and 2 red.
- First of all, soak all the nuts - pistacio, almonds and cashew - for about 4-5 hours.
- Then, start with green cheese. Add to the blender all the ingredients and blend until smooth.
- Pour the mixture into a small pan and shimmer for 5 minutes.
- Grease the cheese mold with the oil and pour the mixture in it. Let it cool at the room temperature.
Red cheese
- In the meantime prepare red cheese in the same way. Add all the ingredients into a blender and blend until smooth.
- Pour the mixture into a small pan and shimmer for 5 minutes.
- Grease the cheese mold with the oil and pour the mixture in it. Let it cool at the room temperature.
- When it's cool enough, put all the cheeses it into the fridge for about 20-30 minutes.
- After that, carefully take out the cheese and dip/sprinkle with prepared mixture.
- Green - shreded pistacios and chopped dill, also you can add other favourite herbs.
- Red - mix sweet paprika powder with smoked paprika and barbeque powder, add dried basil.
