Vegan mexican toast
Quick and easy, vegan mexican toast is perfect when you want your breakfast to be fast, delicious and healthy! And who could resist guacamole in the morning?
(cooked or canned)
(I used whole grain)
Simply mash your beans (pour a bit of water if it’s too thick), add cumin, salt, pepper. Heat in a pan for a few minutes (optional, if you like cold beans)
In the meantime mash avocado, chop onion and tomato. Mix together. Add cilantro, lime, salt and pepper.
Toast your bread. Spread the bean mixture and top it with guacamole. Sprinkle with hemp seeds.
