Vegan Mexican Toast
I don’t know how about you, but I need my breakfast to be quickly made. When I’m making dinner it’s no problem to spend around an hour in the kitchen slowly preparing the food after a long day, but breakFAST – it even says so in its name – it should be fast. So, that’s what I really like about these toasts: easily made, quick, very tasty and most importantly – healthy! Hope you will like them too.:)

Ingredients
- 1 cup black beans (cooked or canned)
- Cumin
- 1 big avocado
- 1 small *onion
- 1 medium tomato
- 1/2 lime
- Cilantro
- Hemp seeds (shelled)
- salt
- peper
- 4 slices bread (I used whole grain)

Instructions
- Simply mash your beans (pour a bit of water if it's too thick), add cumin, salt, pepper. Heat in a pan for a few minutes (optional, if you like cold beans)
- In the meantime mash avocado, chop onion and tomato. Mix together. Add cilantro, lime, salt and pepper.
- Toast your bread. Spread the bean mixture and top it with guacamole. Sprinkle with hemp seeds.
