So this recipe is a savior, when you want your food to be healthy, delicious and ASAP in your plate!

Vegan mexican burrito bowl
20-minute, healthy, vegan burrito bowl. Everything that you need for quick and healthy dinner! By the way - yes, it tastes amazing!

  • 1 cup black rice (uncooked)
  • 1 paprika
  • 1 1/2 medium *onion
  • 1 tsp oil
  • 2 cups black beans (cooked or canned)
  • 3 tbsp tomato paste
  • 1 tbsp barbeque sauce
  • Mexican spices
  • salt
  • 2 avocados
  • 1 medium tomato
  • Cilantro
  • lime
  • 1 cup corn
  • Lettuce* (optional)

Instructions
  1. Boil rice, I chose black rice because it’s packed with antioxidants.
  2. In the meantime chop pepper and 1 onion (leave 1/2 onion for next step) and sautee it in the pan with a drop of oil.
  3. Finely chop some onion and garlic and cook it in the separate pan with a drop of oil, then pour beans and bake for a couple of minutes, then add tomato paste, barbeque sauce, burrito spices and salt.
  4. While everything’s cooking prepare pico de gallo and guacamole mix.
  5. Chop tomato and onion, mash some avocado and mix. Add shredded cilantro, freshly squeezed lemon juice and sprinkle of salt.
  6. Last thing that’s left is just to compose everything on the plate. Use some fresh veggies, leafy greens for more fiber.
