Vegan Meatloaf With Maple Glaze
With this holiday season coming in I felt the true urge to rock my first plant-based Christmas! Also, I think that everyone should include more plant-based meal into their festive season menu, no matter if it’s for ethical reasons or your own health.
I called this dish meatloaf because it’s really is so meaty! Although I’ve never been a fan of this sort of meat dishes (was more like chicken meat lover), but I think it’s a pretty good compromise for everyone!:)

Ingredients
Loaf
- 1 medium *onion
- 3 cloves garlic
- 1 big carrot
- 1 cup lentils
- 1 cup oat flour
- 1 big red paprika
- 1 cups chickpeas (I used boiled)
- 1/2 cup chickpea flour
- Pinch nutmeg
- Favourite spice mix (like sweet paprika, theme, cumin, onion powder, peper...)
- salt
- Pinch Kala Namak - black himalayan salt
- 1 tbsp chili sauce
- 2 tbsp bread crumbs
Glaze
- 1/4 cup ketchup
- 1 tbsp coconut sugar
- 2 tbsp maple syrup
- 1 tbsp wine vinegar
- 1 tsp balsamic cream
- salt

- Preheat oven to 180°C.
- Boil lentils.
- In the meantime chop onion and pour into lightly greased pan. Add minced garlic cloves.
- Grate carrot and add to the same pan.
- While everything's cooking prepare paprika - chop finely.
- If you don't have oat flour you can simply prepare it by pouring oats to the food processor and blend for about a minute.
- Prepare chickpeas . Pour it to the blender and pulse for several times. In the end they should be crushed, but not mashed.
- Take a big bowl and add all these following ingredients - cooked onion, garlic and carrot, chopped paprika, boiled and drained lentils, crushed chickpeas, oat and chickpea flour.
- Then add nutmeg, spices, salts, chilli sauce and bread crumbs.
- Mix well. I prefer to do it with my hands.
- Then pour it to the bread loaf mold and squeeze well.
- Bake about 30 minutes until nicely brown.
Glaze
- In the meantime prepare the glaze. Place all the ingredients into a sauce pan.
- Heat it to boil, and mix for a couple of minutes until thicken.
- When loaf is done cooking spread the glaze on top of it by using a pastry brush. Let it cook for another 10 min.
