Vegan Breakfast Peach Oatmeal Crumble GF
I like my breakfast delicious and diverse. That’s the deal with me and breakfast – I really can’t eat the same thing each morning, it would be like living in a loop. That’s why I am trying to create different flavours and meals.
This breakfast peach oatmeal crust is everything you need on these chilly mornings – it’s warming, comforting, crunchy and nutty. Best to enjoy it with a generous scoop of nice-cream!

Ingredients
Peach oatmeal crumble
- 1 1/2 big yellow peaches (or 3-4 small)
- 3/4 cup almond meal (simply blend 1 cup of almonds on high speed)
- 1 cup rolled oats
- 1/4 cup pecans
- 3 tbsp maple syrup (or date syrup for healthier option)
- cinnamon
- undefined salt
- 2 frozen frozen bananas
- 5 small frozen strawberries
- Vanilla

Instructions
Peach oatmeal crumble
- Preheat the oven to 180°C
- Slice peaches and spread evenly on the bottom of oven bowl (I am using clear lasagne bowl).
- Combine together: almond meal, rolled oats, chopped pecans, maple syrup, cinnamon and salt, mix well.
- Spread on top of the peaches and bake in the oven for 15-20 min.
Nice-cream
- In the meantime you can prepare your nice-cream.
- Simply blend together frozen bananas and strawberries with a splash of vanilla.
- Serve crumble instantly, while it's really warm, with a scoop of nice-cream and top with chopped pecans.
