The best vegan loaded nachos with cashew cheese
Super quick, easy made and really delicious loaded vegan nachos, which will brighten up any house party or just a lazy weekend evening.

Ingredients
  • 250grams corn chips(pack of your favorite chips)
  • 2cups black beans(cooked)
  • 1cup corn
  • 1medium paprika
  • 2medium tomatoes
  • 1medium *onion
  • 2medium avocados
  • Cilantro
  • salt
  • Pepper
  • 1/2 lime
  • 1cup cashew cheese(link at the top)
Instructions
  1. Preheat your oven to 180 C
  2. Spread nachos in a big oven dish (I used the same I use for lasagna).
  3. Add in layers or mix together: beans, corn, paprika. Top it with cashew cheese. Bake in the oven for about 15 to 20 min.
  4. In the meantime chop onion, tomatoes, then mix them with cilantro, salt and pepper. Mash some avocado and squeeze in lime, add salt.
  5. Top your nacho bowl with tomato/onion mix, add mashed avocado and sprinkle cilantro.
