The Best Vegan Nachos With Cashew Cheese
We have all been in that situation, when friends are coming over for the evening and you have no idea what to prepare for snacks… I got you covered with this easy, fast and super delicious loaded nachos with cashew cheese (link to the recipe)!
Now, to be truly honest, I usually make this for lazy evenings with my hubby! Also I probably would eat that alone in one sitting 🙈(and then die from overeating…).

Ingredients
- 250 grams corn chips (pack of your favorite chips)
- 2 cups black beans (cooked)
- 1 cup corn
- 1 medium paprika
- 2 medium tomatoes
- 1 medium *onion
- 2 medium avocados
- Cilantro
- salt
- Pepper
- 1/2 lime
- 1 cup cashew cheese (link at the top)

Instructions
- Preheat your oven to 180 C
- Spread nachos in a big oven dish (I used the same I use for lasagna).
- Add in layers or mix together: beans, corn, paprika. Top it with cashew cheese. Bake in the oven for about 15 to 20 min.
- In the meantime chop onion, tomatoes, then mix them with cilantro, salt and pepper. Mash some avocado and squeeze in lime, add salt.
- Top your nacho bowl with tomato/onion mix, add mashed avocado and sprinkle cilantro.
