Sunny Eggplant

I know numerous of people who doesn’t know how to deal with eggplants (in other words – how to make them delicious).

In our family we looove eggplants because of how I bake them. In the end they come out crispy on the outside and soft-not-too-watery on the inside. Just try – you will love them!

Sunny eggplant
Crispy on the outside, tender on the inside, just 20min, tasty and healthy oven baked eggplan. Perfect to add to any dish, or just to eat it alone.

  • 1 big eggplant
  • Spice mix (use your favourites)
  • Water
  • Salmorejo (optional) (as a dipping sauce)

Instructions
  1. Preheat your oven to 180°C
  2. Cut your eggplant around 1cm thick (you don't want them too thin because it's gonna dry up).
  3. Wet your hands with water and massage every slice.
  4. Prepare spice mix - usually I use sweet paprika, garlic and onion powders, add a bit of fish spice mix and salt. Dip every slice in spice mix and massage it.
  5. Place on oven grill and bake around 15 to 20min, or until it's nicely brown, and for the last 10min turn on the wind (to dry them up and increasing crispness).
