Pulled Caramelised Portobello Burger
I looove burgers, but I’m not always a big fan of making them. Usually, it takes some time to make the patties…
So this one’s perfect for the weekend dinner! It’s fast, delicious and really healthy for a junk-food! Especially if you choose whole grain bun with cereals and seeds! And this better option of coleslaw is much lighter and oil free.

Ingredients
- 8 big portobello mushrooms or about 650g
- 2 tbsp favorite bbq sauce
- 2 tbsp tomato paste
- 1 clove garlic
- Spice mix (Oregano, basil, sweet paprika powder)
- 1/3 red cabbage
- 1 big carrot
- 125 g soy yogurt
- 1 tsp mustard
- 2 tsp agave
- salt
- peper
- 4 burger buns

Instructions
- Preheat the oven to 200°C.
- Shred the mushrooms with two forks and place into heat-safe bowl. Bake for 20min.
- In the meantime, prepare the coleslaw. Grate the cabbage and carrot.
- Mix it with soy yogurt, add mustard, 1 tsp of agave, salt and pepper.
- Add to the pan: bbq sauce, tomato paste, minced garlic, spice mix, salt and remaining tsp of agave. Bring to a boil, then add portobello. Caramelise for 5 min.
- Grill burger buns, cut in half and place bbq portobello, then place coleslaw on top.
Recipe Notes
- Perfect with oven baked potato wedges.
- Bbq portobello is perfect for lettuce taco wraps, sandwiches or with rice.
