Maple Whiskey Whole Roasted Cauliflower
Easy, finger-licking whole roasted cauliflower which marinated in maple-whiskey sauce creates a perfect holiday flavor.

Ingredients
  • 1big cauliflower head
  • 1cup whiskey
  • 3tbsp mustard
  • 3/4cup maple syrup
  • 3tbsp balsamic vinegar(or wine vinegar)
  • salt
  • Pepper
Instructions
  1. Mix all the ingredients (except cauliflower) in that way creating marinate.
  2. Pour marinate to plastic bag big enough to fit cauliflower head and add cauliflower head (before that cut leaves and stem).
  3. Tie up tightly, that cauliflower would be floating in marinate and leave for 7-9 hours (or overnight).
  4. Preheat oven to 180°C.
  5. Place cauliflower head without marinate in the oven bowl with a lid (or place foil on top) and cook for 45min. Keep marinade.
  6. After that, remove lid (or foil) and cook for another 15 to 20 minutes on 200°C.
  7. In the meantime make the sauce. Pour marinate into small pan and let it boil. Caramelised it until desired concistency (shouldn’t be liquid, but still easy to pour over) Note: it should be warm while serving with food (it’s solidifys when cooling)
  8. Serve cauliflower with sauce.
